Cheesy Chicken Taco Soup

  • 1 Tbsp. Olive Oil
  • ½ medium onion, chopped
  • ½ red bell pepper, chopped
  • 2 (10 oz.) can rotel diced tomatoes and green chilies
  • 3 cups chicken broth
  • 1 tsp. garlic powder
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 1 Tbsp. chili powder
  • 8 oz. cream cheese, softened
  • 2 cups Martin’s rotisserie chicken, shredded
  • salt and pepper, to taste

Add oil and onion to a stock pot and sauté over medium high heat for 5 minutes. Once soft, stir in the remaining ingredients, except cream cheese, chicken, salt and pepper. Increase heat to high and bring to a boil. Reduce heat and simmer for 5 minutes. Add cream cheese to the soup, stirring until melted. Add chicken and salt and pepper to taste.
